Snack On This. . . Chickpea Salad!

I will be the first to admit that eating properly, or at all, though out the day is not my forte. I love food but it can become a daunting task to make lunch or a much-needed snack. It’s even worse when I’m on a roll and have to remind myself to eat, then the only thing to make is somehow too much effort so instead, I’ll just skip it. Knowing myself all too well I now set up for success, which includes eating right, with the help of meal prepping and easy snacks.

- Ingredients -
3 Cups Drained Chickpeas
2 Tablespoons Vegenaise
1/4 Cup Relish
1 Tablespoon Chipotle Bitchin’ Sauce or another spicy favorite.
1/4 Cup Chopped Celery
1/4 Cup Chopped Red Onions
Salt + Pepper to taste
Avocado
Mash your Chickpeas, mix in ingredients
+ top with Avocado
Start with your strained Chickpeas, add your Vegenaise and mash away! You can use a masher or fork, just enough to give it that shredded up texture.
Chop up your celery and onion, then add to your mashed chickpeas along with your Bitchin’ sauce, relish, salt, and pepper.
Give it a good mix, add avocado slices on top and serve up! Great with crackers for a snack or make it into a wrap with added veggies for lunch. It’s easy and tastes great, as well as being a great protein boost.
